A module dedicated to kitchen and pastry management, designed for future Executive Chefs and Executive Pastry Chefs. A journey that blends technique, creativity, and sensitivity, offering the foundations to understand raw materials, enhance them, and transform them into dishes that speak to the heart before the palate.
Students learn cooking techniques, seasonal product use, and composition principles, mastering ingredient pairing to create unique gastronomic experiences.
A journey into the aesthetics of flavor: balance, style, technique, and creativity in service of the culinary experience. Organization, roles, responsibilities, and interdepartmental coordination — because a luxury kitchen is an orchestra requiring precision and harmony.
All the secrets of pastry and baking: doughs, leavening, techniques, and production. A module that blends science and sensitivity.
An in-depth exploration of cooking techniques to choose the best method for enhancing each ingredient and creating refined dishes.
How to use local products and respect seasonality, transforming each dish into an authentic story.

A subject dedicated to full restaurant management: service, tasks, use of PMS, and coordination with other departments. Because impeccable service is born from the harmony of an entire team.
An interactive journey into the world of wine and the role of the Sommelier, who guides guests through the perfect choice, creating a dialogue of taste, knowledge, and trust.
An in-depth look at Banqueting, Meetings & Events: service, organization, tasks, and PMS use. Every event is a story that must be orchestrated with precision.

Beyond the two specialized modules in luxury dining and service and hospitality in luxury hotel, the Academy offers three shared disciplinary areas designed to bring out each student's potential. Each module lasts 40 hours and is included in all study programmes, contributing to a complete, transversal, and deeply human-centered education.
A module dedicated to communication and business management, integrating essential topics such as quality management, operational procedures, elements of civil and criminal law, and English language refinement. A set of transversal skills indispensable for understanding, managing, and improving the functioning of a modern hotel.
A module dedicated to the deeper dimensions of hospitality: psychology, philosophy, semiotics, food, wine, music, and theatre. Because cooking and serving are not actions of the hands alone - they are gestures that move through emotions, languages, and symbols.
